Proficiency in Foreign Languages

The proficiency program aims to develop the student’s accuracy, facility and fluency in the appropriate use of foreign languages.

At the end of the program, students will be able to:

  • Employ practical and academic skills necessary to succeed in everyday life and in business
  • Acquire a wide vocabulary
  • Gain confidence in the use of foreign languages in any situation
  • Increase grammatical control in academic speaking and writing

The languages on offer are English, French, Spanish, German and Chinese.

Entry requirement – KCSE or its foreign equivalent
Duration – 6 months per level (2 terms)
Examination: Cascade Institute of Hospitality
Fees – 15,000 per term

Certificate in Pastry and Bakery – Internal

This certificate program offers fundamental knowledge and skills, with hands-on experience that prepares participants for entry-level employment in the food and beverage industry. The program is aimed at working professionals in the food and beverage industry, fresh students, housewives and anyone who wishes to upgrade their skills and knowledge in pastry and bakery and obtain an industry recognized certification.

At the end of this program, students will have knowledge of:

  • Hygiene Policies & Procedures
  • Quality Control Procedures
  • Baking techniques, mixing methods and piping skills

Entry requirements – OPEN
Duration – 3 months (1 term)

Certificate in Tour and Travel Operations

The program is designed to introduce students to core tourism, leisure and hospitality concepts, plus foundation management skills required to successfully manage and develop a tourism and hospitality business, or related leisure and recreation enterprises.

At the end of the program, students will be able to:

  • Develop students’ appreciation of the developments and challenges in business especially the tourism and hospitality industry;
  • Enhance students’ understanding of the roles and significance of various participants within the tourism system and hospitality sector in tourism destinations;
  • Enable students to describe the major tourist market segments and use segmentation to target and meet the wants, needs and expectations of the travelling public;
  • Enhance students’ understanding of business and social responsibilities of major functional departments within tourism and hospitality organizations;
  • Develop a working knowledge of geographical and environmental factors in tourism associated to destination products and learn how to utilize this knowledge when selling the tourism product;
  • Provide students the opportunity to work effectively and constructively in groups for tourism and hospitality projects.

Certificate in Food and Beverage Production and Service

This program prepares students on how to properly handle, prepare, and store items such as meats, vegetables, fruits, and dried foods. It also exposes students to regulations behind cleaning and sanitizing kitchens and tools, keeping work surfaces and countertops clean, properly cutting food, and preparing meals.

At the end of this program, students should be able to learn:

  • How to stay safe in a commercial or industrial kitchen
  • The basics of food safety and sanitation
  • Food preparation
  • Food purchasing, storage, and care
  • Cost control operations

Certificate in Hotel and Catering Supervision

The program concentrates on providing students with the additional knowledge, skills and techniques required for the efficient management of hotel & catering operations. Students may choose to continue with their studies and graduate with a Diploma in Hospitality Management.

Students will be able to understand:

  • Hotel & Catering Law
  • Accounting, Purchasing & Cost Control
  • The Human Resource in Hospitality
  • Marketing for Hospitality & Tourism

Diploma in Food and Beverage Management

This program provides necessary training, knowledge and competencies at supervisory levels in a Food and Beverage division within the hospitality industry. Students in this program spend time in the classroom as well as gain hands-on experience in the college’s kitchen laboratory and training restaurant. An outside internship in a food service establishment is also mandatory.

At the end of this program, students will be able to:

  • Carry responsibility for an operational section within a hotel being within the food and beverage department.
  • Carry out contemporary systems and theories related to the administrative and operational areas in food and beverage.
  • Comply and exhibit sound ethical behavior on the workplace, excellent leadership and interpersonal skills.
  • Deal with a number of key operational issues that might occur within a hotel or a catering organization.
  • Deliver economic, efficient, effective and environmentally friendly operational performance.

Students may choose to continue with their studies and graduate with an Advanced Diploma in Hospitality Management. At the end of the program, students will be able to understand:
